Tzatziki is a goto for us when our cucumbers are in season. I put slices of them in my water as well for a little flavor and “electrolyte boost”…. But honestly mostly pickles. I eat a lot of pickles in the growing season.

My cucumber plants have grown like crazy this year! I've made 3 kinds of pickles, sweet and dill relish and I've still been given oodles of them to my neighbors! I've been making a pasta salad with cucumbers and tomatoes that we eat with nearly every meal, as well as tzatziki sauce and cucumber cream cheese sandwichs. I'm out of ideas

I can't remember the name of it but i once added a thai curry that called for beef and cucumbers which seems unintuituve but it was delicious
chili's. on menus in Thai restaurants has ground beef, rice vinegar, red onion, sliced cucumbers, basil, lime, chilis etc. Served as a cold salad. Tastes better the next day.

I mix cucumber, tomato, and red onion together with salt and rice wine vinegar (yes, it's kind of a pickle but that's not how I use it!) and then add it to cooked couscous. I cook my couscous with chicken bouillon and carrots (I add them to the water first and let them cook a little) and add goat cheese and cilantro once it's cooked. It's such a nice light side dish. You can add shredded chicken to make it more of a meal. I love the crunch from the fresh cucumbers.

Fried pickles, red pepper pickle relish, chicken salad, egg salad, cheeseburgers with sliced pickles, potato salad, creamy dill pickle dip, pickle brined crispy chicken sandwich with pickle slices, tarter sauce, dill pickle soup.....
Well apparently you don’t want a salad. I like sliced red onions, a bit of sugar, pepper, salt, red wine vinegar.

Mix a block of softened cream cheese with an envelope of powdered Italian dressing mix such as Good Seasons. Spread over the party sized pumpernickel bread, if you can find it, if not, cut up sandwich sized bread into 4 squares, and top with a slice of cucumber and a sprinkle of fresh dill weed if you like it. These make great party hors d'oeuvres. I also like to use cucumber as a substitute for chips with hummus or other dips.

Schmorgurken, a German side of braised peeled cucumbers which you peel, remove the seeds, cut into about 1 cm thick semi-circles and then add some fat to a pot add about a tablespoon of diced raw bacon per cucumber to the pot dice a small to medium onion, add to the pot, sauté them add a bit of flour for a light roux then add the cucumbers stew/braise for about half an hour add some dill, a bit of vinegar, salt and pepper to taste

British has it where everything is as thin as possible and is to give the illusion of eating nothing. has cucumber, butter (or margarine) and bread. american style is normally (this is the most common recipe i found) cream cheese mixed with ranch powder spread onto bread (some say white is best but any works) with cucumbers on top of the spread with dill sprinkled on top. I prefer the american one and this is what i was told when i learned about cucumber sandwiches so if it isn't correct i am sorry.

Cucumber Agua Fresca - a delicious and refreshing drink. Easy, too! Basic idea for about 1qt - chop up a large English cicumber (no neeed to peel English ones, but Yes to thick-skinned types) and put into blender with 3T lime juice, 3T sugar, and 1 1/2 cups cold water. Blend very well, strain into a pitcher (or ok not to strain), and mix in another 1 1/2 cops of cold water. Now taste! Adjust to your preference: Most recipes include a little or a lot of additional sugar, and most will want a little more lime juice. (I like it very "light" so I can drink a lot. Plus, it's easy to add more!) Serve over ice.

I make cucumber cake. Sounds a bit weird but it works well. Basically a regular sponge that you add grated, well drained cucumber to. I went further and made a frosting from Pimms and decorated it with strawberries, mint leaves and lemon slices. Pretty damn nice!
