So my husband and I love tent camping. However, we are 38(m) and 47(f) and he is 6’3” 350lbs, so sleeping on the ground in thin mats is not an option anymore. We had a queen blow up mattress but as it looses air through the night if either of us moves or gets up to pee, the other person gets violently tossed up and down. 😂 I’ve seen some cots, but for my husband’s size and my age, I question their comfortability. So I was thinking either a thick sleeping mattress/mat, or newer blow up mattresses but getting me a twin and my husband and queen so that even if we get up to use the bathroom or toss around, we aren’t on the same bed so it won’t effect the other person sleeping. What do other chubby campers do in our situation?

I was thinking one twin for me (I’m 5’1” and 140lbs, and either a full or queen for him since he’s 6’3” 350lbs.
If you have a big tent, the teton xxl cots are pretty comfy with a sleeping pad.
I’m built like the husband and I just got one of these with their additional rollup foam mat. Bulky but SO much more comfortable. I car camp and use a big enough tent, it’s made such a difference!

I’m plus sized and I sleep like a baby on it every time. However, I’m young and my knees are in good shape so if getting down low is an issue for you you may want to get a cot for underneath it. You could get a queen or two twins! Or even two full size if your tent is huge and you like to sleep spread out.
I think you're on the right track with two separate air mattresses. It'll be less pressure on the mattress with only one person on it and you won't be bouncing each other around all night. If you find one with a built in rechargeable pump it's really easy to top off if you need to. My husband and I sleep on separate beds camping and it's way better that way. He's not too picky (he's rolled off an inflatable mat onto rocky ground and still slept fine) but I find cots and camping mats really uncomfortable as a side sleeper, and even the lower to the ground air mattresses can be hard to get out of. I also worry about them loosing air if I end up flopping into them inelegantly because of how close to the ground they are. You might get away with a soft pad on a cot but they're so narrow, I suspect your husband will prefer a bigger bed. I'm over 100lbs smaller and almost a foot shorter than him and I can manage on a twin bed, but I don't have enough room to spread out on a standard camping cot.
I’m 6’4” 295 lb guy I sleep on a Cabela’s Big Outdoorsman Cot and I use a 4” twin size memory foam mattress topper. The cot sells for $130 and memory foam topper sells for$75 on amazon. I camp for weeks at a time and sleep like a baby.

It may take up a bit more space in your car but take a look at a folding foam mattress or shiatsu mat
My husband and I each have our own twin mattress. The key to not losing air overnight is to keep the air inside the mattress warm. I either put a heavy blanket under the mattress or if I have electricity I put an electric blanket under it on low all night. We lose next to no air at all and it's very comfortable.
