Meal prep ideas for a construction worker with no access to refrigeration

I'm looking for tips to how I can better meal prep for my partner, who has no refrigerator to store his lunch in so most of the time the food just sits in the car for hours getting warm. We have an insulated bag and ice packs but it's not enough. I run out of ideas fast of what to cook that could work out with his situation. Keep in mind he sometimes doesn't get lunch till a bit later so his food is getting WARM!

° The Power Up brand trail mixes + yogurt for the ride to work;

° Beef jerky to snack on if he has to drive anywhere else, but these are expensive as hell, even if we buy the small packages, which are not enough!!;

° Whatever meal I had prepared;

° Oranges, bananas, or apples and, sometimes, peanut butter sandwiches.

If I have money myself I also throw in there some junk food like takis, chocolate, and coke. How good or bad is this lunch?

In the end, what can I cook that won't taste or feel weird if not kept cold? Sometimes (though rarely I think) he doesn't have access to a microwave either.

+ What is a good, non-expensive brand of beef jerky that has packages with a lot of (big) sticks? He prefers chomps but I'm tired of spending 18-30 bucks weekly for just 8 or 12 sticks, especially since I pack him at least two sticks at a time, so they don't last more than a week (sometimes less).

my buddy builds docks for a living, spends all day on his boat on the water generally during summer. he got a battery powered cooler that he uses. I would suggest looking into something like that. they also make good quality smaller coolers that will keep ice cold all day. An insulated bag really doesnt do much outside of transport from home to a work fridge but a quality cooler loaded with ice will do the job

  honestly, a quality cooler is worth the investment it'll keep food cold all day, and it'll do a much better job than an insulated lunch bag with a couple of ice packs.

  If your cooler ‘isn’t doing much’ that’s a problem with your cooler or how you’re using it. A pretty basic cooler with an ice pack will keep cold food cold for hours no problem. Many of the battery coolers use a thermoelectric device, which is not efficient compared to a compressor system. They’re downright bad, honestly.

Since you need things that are essentially shelf stable, you’ve found most of the right solutions already. Basically, you need foods that hikers would eat. Tuna pouches can help add in some healthy variety, but not too often- daily would exceed the mercury recommendation. Canned salmon is a bit more expensive but avoids the mercury problem. Hard boiled eggs w/ a seasoning mix can be nice. In a pinch, meal replacement shakes can turn misc snacks into a more filling meal- huel is okay, and there’s lots of protein shakes out there that don’t need refrigeration, I’m a fan of Owyn for non-dairy ones

  I figured the snacks were fine but the meal part I struggle with, especially with him being a little picky — doesn't like tuna or tomatoes, microwaved chicken, and has a visceral reaction to sausage and hotdogs. Though he'll eat whatever if he has to. I'll look into the shakes. Thank you for the advice!

Does he have access to a microwave? I use Souper cubes and freeze all my meals. They defrost in my bag and by lunch they are usually mostly defrosted

In the early 1900's Italian coal miners needed food to sustain them for long hours of hard work. Italian wives and mothers invented the pepperoni roll, which has been a staple in WV for a hundred years. I'm sure there are YouTube videos on it, but you simply thaw frozen bread dough, cut it into portions, roll slices of pepperoni up in it, and bake. The meat is cured so does not need refrigeration. Dunno about keeping it in a hot car, but at room temp it is fine for days.

Get a cooler bag and put several a frozen bricks inside then your food will not get warm. But better still take ask your partner to take the cooler out of the car the vehicle so it won’t heat up like crazy and put somewhere in the shade.

An insulated bag doesn't help much. When I travel for work I put one insulated bag inside another, which keeps things cool a lot longer. But if it's in a car or truck parked in the sun you probably need a decent small cooler. I got a yeti clone at a yardsale for $20. You want something with an insulated lid. Actually a cheap, thick styrofoam cooler would work well.

You're on a cooking forum. Life is too short to eat crap food from celephane . Every 2 weeks I crockpot a small Mississippi pot roast with potatoes,onion and carrots. I will buy or make a lasagna, pizza, casseroles or pasta. I portion into glass containers and freeze them. Thaw overnight and set inside the windshield to let the sun heat them up. In the middle of summer I eat fruit,primarily melon and sandwich meat. Cheap is sausage and noodles with broccoli and cheese. There is r/jobsite eats . Again you can "cook" good food cheaply. Currently in my freezer are 2 bogo porkloins that will meet a crockpot, then turn into pulled pork. 35 years of eating on the jobsite, I have a cheap microwave and a small grill that can get used. Cooked food does NOT need to be kept cool between 6-12 am,only fruit and salad need to be below ambient for taste's sake.

You can also throw stuff that is frozen in there to defrost slowly and kladd coldness without taking up all space. Frozen water bottle, frozen yogurt tubes, frozen berries or grapes, edamame, heck I have even used frozen bread for sandwiches to help keep cheese and salami cool. Nuts and seeds. Apples, oranges, hummus...so many options to add to a cooler for a filling lunch and snacks.

He needs to keep his lunch bag and ice packs inside a styrofoam cooler. Those lunch bags are not made to keep food cold in extreme heat. They're great if the lunch bag is stashed in a desk drawer in an air conditioned office, but will fail if kept in a car parked in full sun on a day that is 90°F or hotter.

Pasta salad made with olive oil or Italian dressing. Use tortellini or pasta and whatever meats, cheeses and veggies he likes. Cubed deli meats, cubed cheese, and whatever fresh veggies you have. You could use jarred veggies like sundried tomatoes, peppers, etc. if you prefer. This will be okay for a bit even if not refrigerator cold. Others have mentioned the battery powered cooler but a good sealed cooler will keep things cold for days. Yeti is the most famous brand but they are pricy. Igloo and Rtic have versions that perform similarly and are less expensive.

I’m old and microwaves did not come into existence until I was in my teens. I remember my dad had a hot thermos that he would put leftovers or soup in and take to work. He did not care if the leftovers were mixed together. Then he would pack crackers or bread and a snack cake. He worked in a power plant and I know it got terribly hot in there in the summer months.

Leftovers in ziplock bags or mason jars in an insulated cooler with ice packs. Reheat on foil in a HEATED lunch box that works off car 12v outlet. Did this for years, it’s as good as fresh cooked meals, sometimes even better as the flavors really meld in the heated lunchbox.

I’d invest in Rtic or other heavy duty cooler that keeps things cold for 40+ hours. That’s what I use on road trips. The smaller ones start at about $60. Even in my un-air conditioned truck, if you follow their cooling instructions they’ll keep everything cold for more than a day.

Shelf-stable rice or lentil pouches (the pre-cooked ones that don't need fridge, just a quick heat or even eaten at room temp) are a good base — pair with canned chicken or tuna and some hot sauce, tastes fine even warm. Nut butter + banana wraps hold up well in heat too and are more filling than PB sandwiches alone. For the jerky cost issue, look at whole muscle jerky in bulk bags (like a 1lb bag) instead of the small single-serving sticks — works out to way less per ounce, you just portion it yourself into smaller bags at home.

Didn't see a suggestion for cold noodle or macaroni salads (Thai peanut, sesame, Italian style with pepperoni and olives).

Costco has beef sticks down to $1.25 per stick, but I don't think you're going to get cheaper than that for the single serving style. Some brands sell bulk loose meat sticks in one bag that would have to be transferred to a cooler for the day. Seems like it would be significantly cheaper to buy a roll of salami (or deli cut) and spend a little money on a proper insulated cooler since the soft bags don't do much.

Starkist packs of tuna, salmon or chicken salad in the pouches. Shelf stable until he opens them, and you can pack extra mix ins like shredded cheese for protein, or just crackers for dipping.

If you do get a hard shell cooler, google "tortilla sandwich rolls." Infinite fillings and tasty dipped in salsa. These sausage pinwheels are SO easy to make in bulk for dinner and I've had people say they like them cold the next day.

Second other people's suggestions to get a vacuum food jar or box. Those are supposed to keep things warm and cold.

Ice packs in a portable lunch bag or backpack. We take these on all day outdoor excursions (hiking, disc golf, kayaking) and they work well to keep food fresh and cold. Throw in a frozen water bottle or two and you're golden.

When I was in a similar situation as your husband I would stick to plant based options that were safe to eat at whatever temp like fruit, rice& beans, veggies, nuts, PB and honey sandwich, pickles. I would also invest in a better cooler. I’d freeze my water bottles to maximize space.

Get an *actual cooler* instead of an ice bag. You can buy coolers that plug in to your vehicle and they are great. But please note: you can only leave them plugged in while the vehicle is running or it will drain the battery. But the point is to get ice sheets and layer his food between them before leaving home and plug it in on the drive to work, this helps cool it down and helps the ice sheets stay cold longer. Unplug when he parks! Don’t open until lunch and the fact that it’s a real cooler, layered ice sheets and the cooler itself helping to cool down the cooler will help keep the food cold for much longer. Also have him use a windshield shade to try to keep some heat out.

If you're meal prepping for him, I'd lean away from expensive processed bullshit. Like beef jerky. Or just about anything resembling gas station food. But I do like that idea someone else threw out. Like the Cornish pasty. You can make them any number of ways. Beef, steak, chicken, pork. You can also borrow inspiration from empanadas. They're temp-stable. And you can have a blend of veg, carb, protein that will have longer term energy. Rather than highly glycemic shit like takis. Plus you can meal prep a shitload of them if you want.

Ok so we dealt with almost the exact same thing and honestly the biggest game changer was freezing part of the food the night before instead of just putting it in the fridge cold. Like if it's rice or anything with sauce, freeze it solid, then it acts as its own ice pack basically and by lunch time it's thawed out but still safe instead of sitting warm the whole morning. Also one ice pack usually isn't enough, we started throwing in like 2-3 smaller ones instead of one big one, makes a bigger difference than you'd think. For actual food ideas, stuff that doesn't really need to stay cold is honestly the easiest fix. Things like hummus with veggies, hard cheese and crackers, pb sandwiches, canned chicken or tuna pouches, boiled eggs, trail mix type stuff. Basically avoid anything with mayo or dairy sauce or plain rice/pasta that's not frozen, those are the ones that actually get sketchy after sitting warm for hours, not just less tasty. If it's genuinely sitting there getting warm for like 4+ hours even with the insulated bag, ngl I'd just look into one of those little 12v car coolers, they're like $25-30 and would probably just solve the whole thing instead of you having to think about it every single day.

My previous job we were issued these and my experience with them was all over the world, Africa, Middle East, and US. Get two of their icepacks, keep them frozen when not in use and enjoy cool food all day long. We normally needed 2 or so days of refrigeration and worked for us. Side note, the diet choices we've been picking while not having suitable refrigeration is certainly not the healthiest options for long term sustainable good health. My go to lunch is brown rice for slow carbs, chicken for protein, romain lettuce, minced/julienned veggies and a sauce (I also use liberal amounts of hot sauce). That lunch can be made into basically any type of flavors from BBQ, to cilantro lime, Asian, and balsamic honey. Add in some nice cold carbonated water and its amazing doesn't need to be heated and filling.

Get him an RTIC soft pack 20 can cooler. I can leave mine in my truck all day and frozen items won't even begin to thaw. It's been my go to lunch box for 5+ years. I throw in a big freezer pack and I'm set for the day. They're about $100 these days, but well worth the investment when you consider the daily use it'll get. Mine is from before RTIC getting sued by Yeti and it's a direct knockoff of their $300 cooler.

Depending on season & circumstances, you could just let the hot car do the cooking: bring refrigerated or frozen meal (metal or foil tray, foil cover), keep it on an ice block or in a cooler until break time, then take it out & put it into a black cloth sleeve or bag, place on dashboard in the sun. Then when lunchtime rolls around it’s steaming hot & ready to eat. Solar oven, low-budget version.

Depending on how long he is waiting to eat, I bought one of those portable battery lunch box that heats the food. They work really well. I used it when I had to go on site to areas without a microwave. I got the EastOak brand and also bought extra containers so I can prep for the whole week. You can even freeze the food and then put it in the lunch box. It will start heating it up about an hour or so before your eating time and it’ll keep it warm for about an hour.

I am one of those construction workers who eats a cold lunch every work day

Greek Yogurt

Bel vita Bar and or equivalent Granola Bar

Mixed nuts and dried fruit

Protein milk (absolutely necessary).

Boxed salad for busy days

Entres include: Tuna Salad and crackers, Cold Sandwiches, Salsa and Chips, PBJ, Mashed Potatoes, Cold Pizza, Lasagna/Pasta (I don't mind eating cold).

All else guys get a heatable lunchbox. Luncheaze.

You can make your own jerky if you have enough time.

For jerky, you could look into Biltong or Droewor sticks. They tend to be cheaper because they are less well known, but personally I prefer them to jerky sticks. You could also look at vilgain.com. I think its meant for gym bro's, but they make a heap of healthy foods, no preservatives or fillers. Their beef beef sticks, beef bars and turkey strips are very nice. I bulk buy from vilgain.co.uk, I don't know these would compare to US jerky prices, may well be more expensive

They make a crock pot lunch crock that heats food. It plugs into an electric outlet. Would he have somewhere to plug in it and have a hot lunch? You can buy extra inserts for them. I bought my boyfriend one and he uses it regularly in the winter. It doesn't cook but only heats.

You just need a small cooler. Like a 10 to 20$ one and an ice pack. That will keep acting cold plenty long from morning to lunch. I did this all the time back when I used to work at a golf course

Try Quinoa Salad which makes a week of lunches and all you have to do is toss 1-2 cups of quinoa into a rice maker with twice that of water and it'll do the cooking for you. Then mix with the chopped vegetables and dressing to help fortify with some additional nutrients and it's better than anything you'll get at a restaurant. I double the black beans and add olives (there's a Lebanese grocer tucked into the neighborhood nearby). But it will be fine even in unrefrigerated plasticware for a day, just keep the bulk of it in the fridge.

I'd have that plus a container of something peanut-butter-based which would vary depending on the season. You could also just do a bag of toasted tree nuts, they're both good for energy and antioxidants.

But if your insulated lunch bag isn't keeping things cool (or warm), that's a lunch bag that needs to be replaced. They should be able to keep something at a relatively low temperature for 4+ hours with no problem, just don't by the cheap garbage they sell at Walmart.

I just use those blocks you can freeze. Never gotten sick.
