I HATE coconut and I do not like rum. I do like strong but tasty drinks and pineapple juice is my favorite. Frozen is good too!

Add a bit of small ice to shaker, shake for a quick bit. Strain into glass filled with pebble ice. Garnish with cinnamon stick and mint (or bourbon infused cherries you made a long time ago, and some dehydrated citrus wheels that you will later eat).
This is a very good cocktail! The Falernum and bourbon play so well, and everything else is in excellent balance.
How about a pineapple mimosa? Equal parts pineapple juice and Prosecco/champagne Splash of triple sec Garnish with a wedge of pineapple
The Algonquin is a modern 2:1 Manhattan with 1/2-3/4 oz pineapple juice added (and typically shaken rather than stirred due to the juice). The presence of the pineapple juice smooths out the booziness of the drink in the glass without making it overly sweet. You may need to remind yourself not to quickly toss back what is still basically a full strength Manhattan.
Muttle some pineapple with lime, 2 oz of gin, 1oz of agave. So good.
I’ve been doing what I call a Flying Pineapple, it’s a paper plane but cut the lemon down to 1/4oz and do an oz of pineapple. It’s flying ;) out the door at my bar.

Gin works really well. The enzymes in the pineapple make the juniper milder and it goes down nicely. I cant do rum at all, gets me ridiculously drunk quickly and throws my blood sugar off. I studied some Tiki drinks and was surprised how much gin popped up.

The el diablo is tequila, crème de cassis, lime juice, topped with ginger beer. Every bar I worked at I added pineapple juice and it sold like crazy. Delicious and refreshing
