Following Evolutions in Bread with both instant yeast and levain. No crumb shot as I gave it to my neighbour warm.
Lovely bake - joy to see. Be good if there was a crumb shot too. Thought of getting a fine serrated small knife kept just for scoring?
Thanks! I wanted to give it to my neighbour warm so I didn’t get a crumb shot but I would have liked to. I do have a lame but I might need to flip the blade because it did feel a bit choppy when I scored it.
Such a warm and thoughtful thing to do, giving it fresh from the oven. The crust looks perfectly crisp and that scoring is clean as can be.
Newby here-do you score it so it doesn’t break on its own?
That’s right, basically you can control how the bread opens up. That being said, I think it’s less important for a pan loaf since the pan itself forces it to go up, if that makes sense. For a boule, batard, or baguettes it’s more necessary since the bread could open on the sides or bottom.
