I live far north enough that the temperatures are already dipping below 10C at night.
As a result, I'm daydreaming about autumn and all things spooky season. My favourite thing to eat in autumn and winter is soup, but I find that I get stuck in ruts where I make the same recipes over and over again.
I'm aiming to expand my repertoire. What are your favourite soups to enjoy over the cooler months?

Loaded potato, butternut squash (variation, butternut squash and corn chowder) split pea with either ham or ham hock, also white bean soup with ham hock, clam chowder.
Loaded potato soup is AMAZING. I made that for the first time last November, and served it with corn, bacon bits, sharp cheddar, and sour cream.

Spiced red lentil stew with either kale or spinach; it has (canned) tomatoes, carrots, canned coconut milk, and I like to use Korean hot pepper when I make it, although sometimes I’ll use spicy ro-tel tomatoes. I also love chicken stew with dumplings, and a chicken-tomato based soup with cheese tortellini.

Cream of onion soup. Made it for a dinner party and all the guests were blown away. I made croutons to go with it for a contrasting texture.
French onion soup is my all time favorite soup. I am intrigued by cream of onion.
Years ago I made a roasted pepper soup for a friend's father when he was sick. He talked about that soup for years!
Beef barley, beef stew, salmon chowder, and chicken stew witg dumplings.
I made a roasted butternut squash soup with apples for a friend's mom. She loved it so much, she asked for the recipe and made it weekly.

Coconut curry carrot soup! Absolutely delicious with Thai red curry paste ans coconut milk in it, one of my favorites!
This is so good! It also works well with butternut squash or pumpkin.

Butternut, borscht, chicken & veggie
Mixed bean and ham Italian wedding Sweet butternut squash Savory butternut squash Matzo ball Pho Borscht
Lemony red lentil, avgolemono, black bean, and most especially pho. It’s a ton of work but I make a double batch of the broth each week starting in the fall and the second batch is even better.
Potato soup.
Chop 4-6 slices of bacon and fry.
Add in 1/2 teaspoon celery seed to the grease with one finely chopped onion and 1-2 smashed garlic cloves. Cook until the garlic and onion is clear. Deglaze with a bit of water.
Add in 6 medium russet potatoes, chopped into small cubes and barely enough water to cover them.
Boil until done.
Stir while they are boiling to make sure all are finished cooking. It is ok for the water level to drop, just stir so they get cooked evenly.
When potatoes are finished cooking, mash until the potato bits are nickel to pea sized.
Add in enough milk to get the level of liquids back up to the original level of water prior to boiling.
Add in powdered garlic to taste
Adjust to taste with garlic and onion powder. You can add no-salt seasoning and salt to taste as well.
We always topped off bowls with garlic powder.
Potato soup
Start with frying 6 slices of bacon in a pot. When done pull out the bacon, chop and return to the pot. If you don't have bacon, it is fine. Adding in bacon bits later works or skip. Smaltz will also add in flavor and is a good substitute.
Add in celery seed to the grease and toast a bit with a smashed garlic clove until the garlic is clear then deglaze with a bit of water. (Some people will just add a can of cream of celery soup instead of celery seed)
Add chopped potatoes and barely enough water to cover them.

Smitten Kitchen’s baked potato soup is my go to. The leeks add a garlicky goodness without being too sharp and it’s amazing once you add baked potato toppings
The New Basics Cookbook’s Winter Vegetable Soup. Hands down. Potato, leeks, rendered bacon fat, spinach, tarragon, heavy cream and half puréed, in a nutshell. It’s effing delish. Real crowd pleaser.

Smoked ham hock and lentils
All of the Korean soups and stews ("tang", "jjigae", "guk")... kimchi jjigae, soondubu (tofu) jjigae, galbi tang (short rib soup), samgyetang (chicken and ginseng soup), doenjang jjigae (soybean paste stew), etc., etc., etc.
I roast up butternut squash, sweet onions, garlic and carrots. Then I blend it all together and put it in a container in the fridge. When we want a good autumn soup, I scoop out some and add chicken broth and oh man. It’s one of our faves.
Caramelized sweet potato and white bean soup. Made with homemade stock, sauteed onions, ajika seasoning, a little cream. Blended until smooth, garnished with crispy roasted white beans. 😋 This is my hyperfixation soup during Soup Szn

All homemade: Chicken Corn Chowder with cornbread, my take on Panera's Autumn Squash Soup, Tortellini and Sausage Soup, and good old fashioned Beef Stew with dumplings.

Chicken Tortilla Soup is delicious as well as the vegetarian version made with chickpeas.
Chili, and I try a new one every year. Split pea with ham. Julia Child's version of cabbage soup, except I chop the onions up and eat them, plus I use ham instead of bacon. Ukrainian borscht. Lentil. Chicken and sweet corn chowder. Chicken noodle. Chicken and rice. Thai yellow curry chicken soup. And I like to find a national soup and try that. Last winter was Cuban black bean.
Dill Pickle Soup I like to thicken mine up at the end using instant mashed potatoes. I also use any leftover pierogi dough I might have in the freezer and roll them up into little balls for dumplings.
Pinto Bean Soup this freezes very well. You can add meat if you want but its very filling as is. I usually serve it with quesadillas.
Ham & Potato Corn Chowder I like to throw in a small can of green chilis or some chopped pickled jalepenos for a little bit of heat
Meatball Soup whenever I make a big batch if meatballs for the freezer I make some little baby ones specifically to use in this soup
Omg. My Polish grandmother served her dill pickle soup with sauerkraut pierogi and it was incredible.
I just saved the dill pickle soup recipe and my mind's blown over stuffed pepper soup! I make a stuffed pepper casserole on the regular because we're overrun with peppers and tomatoes, so this is a nice alternative I can't believe I haven't thought of before. Thanks for sharing the links!

A smooth potato and pumpkin soup with just a little cinnamon. That or an Italian tomato soup with basil and a grilled cheese sandwich to dip in it.

I like to make a big pot of beans Lentil with lots of diced carrots, onion, celery, garlic, red pepper flakes (plenty), and thyme Black eyed peas with salt pork and onion Limas with a ham hock and onion Split peas with ham and carrots Pintos or pinquitos with a paprika or chili powder type broth (maybe bacon, maybe ground beef or turkey) Black bean soup served with sour cream and cilantro
I love Hot & Sour soup any time of the year, including autumn. Others on my autumn list would include Ham & Potato, Zuppa Toscana, Clam Chowder, Broccoli & Cheddar.
One of the only things on my fall/winter rotation is weekly vegetable beef soup. My husband and I vie for the last bowl.
