HI! I haven't read a lot of fantasy but I quite like the genre, and I'm looking for a book with the "classic" fantasy setting with knights, castles, wizards, dragons and things like that. Could be both high or low fantasy, and I don't much care if it's recent or not! I also have no problems with depiction of violence.
I've already read ASOIAF, Tolkien's works and The Once and Future King.

Memory, Sorrow and Thorn by Tad Williams inspired a lot of ASoIaF!

"Covenant of Steel" by Anthony Ryan. Pretty much exactly what you want. Knights, aristocrats, peasants, etc. And later on crusades.
These books are slept on way too much.
Just about any of the DnD Forgotten Realms or Dragonlance novels
The Wizard of Yurt series. It's a humorous series (that does get some more serious depth) that takes place in basically a fairy tale version of medieval Europe (and the Middle East in one book). The main character is a new graduate from wizarding school who gets a job as the court wizard in a tiny kingdom (Yurt). Very fun series. Glen Cook's Dread Empire also scratches a lot of these itches. Its got tragedy, romance, scheming wizards, and all sorts of kings, rogues, and magic.
Prince of Thorns, The Devils, Between Two Fires, and The Bright Sword.
I know not everything is revealed in the first book but I really don’t think Broken Empire fits.
For a more recent series I gave The Bound and the Broken by Ryan Cahill a try and really enjoyed it! It's got knights (more like paladins), castles, wizards (kind of?), and well, you'll just have to wait and see about the dragons. For something that's been around for a while I recommend The Mithgar series by Dennis L. Mckiernan. I would basically describe it as Lord of the Rings Lite. It checks all the classic fantasy boxes and are fun, easy reads.

The Kormak Saga by William King.
