if you soak in boiling water first, isnt that better for almost no extra effort? i'm not an expert in this but the theory says it dries out the tofu?
I've boiled tofu several times to test the theory. Unsurprisingly, submerging anything in water does not in fact dry it out. In any case, why would I need to dry out the tofu? I want the interior to be soft and moist as a contrast to the crispy, chewy exterior. Boiling tofu is just one of those online myths that refuses to die. It's a waste of water, time, and effort.
