Need recommendations for easy squares for a wedding dessert table

My daughter is getting married next weekend in a backyard wedding. I need to make about 3-4 pans of squares or bars or cookies for the dessert table. I used to bake lots but have not baked in years. Any recommendations for easy recipes that will freeze well and maybe look kind of fancy? Hoping to make them this weekend. Thanks!

Holiday Cookie Contest Favorite: Salty Caramel Crunch Bar Servings: Approximately 54 bars Ingredients: SALTY CARAMEL CRUNCH BARS 90 Club crackers, such as Keebler brand 1 cup unsalted butter 2 cups graham-cracker crumbs 1 cup firmly packed brown sugar 1/3 cup sugar 1/2 cup whole milk 1 teaspoon vanilla extract 1 cup butterscotch baking chips 1 cup chocolate-hazelnut spread, such as Nutella Directions: Line a 9x13-inch pan with 1 layer of crackers, cutting as needed to fit. In a large saucepan, melt the butter over medium heat. Add the graham-cracker crumbs, both sugars, milk and vanilla. Bring to a boil. Boil for 5 minutes, stirring constantly. Remove from the heat and spread half of the cooked mixture over the prepared crackers. Place another layer of crackers on top. Spread the remainder of the cooked mixture over the crackers. My absolute favorite is rice crispy treats. You can add jimmys in the wedding colors. Cut them in triangles and stand them on edge. Tada fancy!

Maybe do a few different things, lemon bars, chocolate squares, berry slice a cookie. That way you can a tray or 2 of each. Or just choose your daughters fav from childhood and her fiances also

I discovered how easy it is to make pecan pie bars. Use foil extra long as handles so you can remove from the pan easily and cut into squares or rectangles.

These have been a hit at every occasion I’ve brought them to. Super easy! Pudding Bars Very Delicious and Popular 1 Cup White Corn Syrup 1 Cup Brown Sugar 2 Cups Peanut Butter 6 Cups Rice Krispies Melt syrup, brown sugar and peanut butter, mix into Rice Krispies. Press into bottom of greased jelly roll pan. 1 Cup Butter - softened 4 Cups Powdered Sugar 6 TBLS Milk 2 Small Boxes Instant Vanilla Pudding Mix Mix all together and spread evenly over top of Rice Krispie mixture 3/4 Package Hershey’s Chocolate Chips (Hershey’s) 1/2 Cup Whipping Cream Melt Choco Chips in pan or microwave, add whipping cream. Stir until smooth. Spread over pudding mixture. Eat ‘em all!!!

Lemon bars, brownies with a chocolate ganache frosting, Nanaimo bars (no bake Canadian specialty, gorgeous layered appearance), cheesecake bars (can swirl in a berry or caramel for a beautiful finish on top), blondies, pecan pie bars. I’d do 1-2 chocolate, 1 fruity, and 1 that’s sort of new or interesting or you just love for a nice mix. Alternate cutting one kind into squares, another into diamonds, to make presentation more interesting. Someone else mentioned adding edible flowers, which would be a beautiful finish too.

Brownie Lemon Date Raspberry Peach, but this one would have to be made day before Another option would be to do the basics,- brownie, date and lemon, and then do a basic berry tart. Bake off tart shells, fill with a dollop of custard, then top with berries or fresh fruit. The tarts look good and the ingredients can be made a few days in advance.

I do oat crumble squares, think of an apple crumble but the opposite, where it’s mostly crumble with just a little bit of fruit. I press a bunch of the crumble into a cookie sheet lined with parchment, spread a layer of jam over the top, then sprinkle more crumble over the top. (The crumble is the best part anyway)

To make things look fancy, cut diagonal for diamonds instead of squares. Also you can cut things like rich brownies into like 1 or 2 inch squares, and stack them for presentation.

Not fancy, but seven layer bars SLAP. I just follow the recipe on the back of the Eagle brand condensed milk. I lightly toast the nuts (pecans or walnuts), coconut, and graham cracker crumbs. I also pour the condensed milk on top as the final layer so the heat of the oven caramelizes it a bit, and so the graham cracker crumbs don’t get soggy. 🤤

If you do the lemon bars, wait until they’re defrosted to add the powdered sugar. Amazon has coffee stencils that would be perfect (hearts, flowers, love) for decorating bars for a wedding. Put bakery stencils in their search bar, scroll down. Some items decorated scattered amongst the others might elevate the look of the desserts.

7 layer/hello dolly bars are so easy that a child can make them. Rice krispy treats are great, particularly if you have kids there. Lemon bars are good. An oat bar with jam between the layers is nice. And brownies are always good (bonus: a Ghirardelli brownie is as good or better than every homemade recipe I’ve ever tried, and Costco sells a big box).

Right now NYT cooking is showing a no-bake chocolate mousse bar that looks good enough I put it in my “want to bake” file. To access the recipe you just have to register with NYT cooking is think. It is basically a graham cracker crust topped with a whipped cream based chocolate mousse (chocolate ganache + whipped cream). It looks gorgeous, and would be nicer on a dessert table than a brownie. It is something you would want to keep refrigerated, though.

I love a good hand held dessert! I used to work at a coffee shop and we had lots of fun bars-apricot oat bars, lemon bars (HUGE hit) individual fruit tartlets, macarons (those are difficult to make but look so elegant-if you have an Aldi or Costco near you they have reasonably priced ones that are good) scones are nice and light but crumbly, would be good for a tea time or mid day wedding-apple blondies, oatmeal cream pies, even pre-assembled s’mores. The possibilities are endless depending on the time and effort you can/want to put in.

Never found a recipe for this but the absolute best bar I’ve ever eaten (I’m a lemon bar gravitator) was a rhubarb cheesecake bar from some bakery in the upper Midwest. I am now too allergic to the ingredients but they were phenomenal.

I agree with majority of folks. If you are looking for a bar that can also be dressed up, then something like a lemon bar (or a key lime bar) would be awesome. The NYT also has a beautiful recipe for cranberry lemon bars if you want to mix it up and can find fresh cranberries. But any of those would be beautiful with a simple berry and mint leaf garnish or an edible flower garnish, And they freeze extremely well.

Im a huge shortbread person. The old King Arthur shortbread recipe is the best and is so easy. I always bake them in tart pans so they get cut into triangles like pizza. Theyre easy to decorate, and as mentioned earlier, fruit or edible flowers to match the bridal colors is a great add-on. I hope the wedding is fabulous!

I love these biscoff no bake squares. I cut them super small as they are very rich (less than an inch) and use a darker chocolate to top them than is suggested. I’d suggest they’d look amazing with some edible gold on top. They keep for ages too.

Shortbread could be a good match. I make these at Christmas time and for parties. Really simple and great foundation to decorate with sugars or chocolate, just a few ingredients, easy mixing, no chill time, etc. I’ve cut them in small triangles to arrange like quilt blocks, the long bars like here, etc. Pay attention to the temperature (lower than common, I was rushing once year and didn’t adjust and ruined them).
