Ive got no plans for tonight so I want to spend some time making something new. I'm not necessarily an amateur at cooking but most of the stuff I make is relatively simple to save on time and energy, so I figure now would be a good time to branch out and try some new recipes that require more effort and hopefully help build my technical skills.

What do you already cook? What cuisines are you curious to explore more deeply?
I mostly just cook rice with some kind of meat and veggies, and I'll switch it up by using different marinating sauces/spice rubs depending on the meat. I enjoy all kinds of cuisines, I think I'm looking for some kind of dish that is its own standalone meal rather than just making different sections for carbs, proteins, etc. if that makes any sense
Improve by pushing outside your limits. It could be a skill, like focus on a knife skill you want to improve. It could be refinement, multiple copies of a dish that you try variations to find which you prefer. It could be a new recipe or ingredient. Pick one you've never made from a cook book, or get ingredients you seldom use and incorporate them.
