Hey y’all! I ordered half a hog this spring and got a ridiculous amount of ground pork - the only ground pork I eat is in potstickers and egg rolls. Are there any recipes that are similar to how American-Chinese restaurants make theirs?
Also if you have any other ground pork recipes, please throw them my way!

Boiling water dough for potstickers= equal parts all purpose flour and Boiling water. Mix, knead, rest. Finely diced cabbage, macerated for half an hour with with salt, then squeezed dry in a clean lint free dishtowel. Mix with the pork and add garlic, ginger, and soy. It has been a while since I've made them. I'm sure there are other ingredients. I would figure out the optimal weight for each wrapper, portion them out ahead of time, and keep covered. The dip sauce is basically soy sauce and black vinegar (chen kong?) plus whatever Like I say, it's been a while, but I used to enjoy making them with the kids.

Not the recipes you asked for, but if you like sausage of any type, make your own! Italian sausage and breakfast sausage are an easy way to start, look up the seasonings to add, let it rest a bit after mixing, and then cook as crumbles, patties, or uncased links.
