We'd have had the series wrapped up a decade ago and probably a couple dunk and egg novellas by now too. Would've been nice but I think the chaotic process is part of what makes his world feel so lived in
Yeah, I’d take the completed series in a heartbeat, but I do wonder how much of the depth comes from him obsessing over every branch of the story instead of just moving forward.

Have you read the rest of George’s stuff? He’s been remarkably prolific even without finishing this one series.
King is a great writer, but tends to have really shoddy endings. The world building is at times some of the greatest writing. You hated season 8? Imagine a season 8 where nothing was forgotten, but hand waved away, kinda like the elephants, but same for dorne, euron, the hound, nights watch, gendry, , , ,

I'd consider Tad Williams a disciplined version of GRRM. His series are long and fairly complex. Usually he needs 4 books instead of the intended 3 to complete the series, but he does complete them. He delivers a new book every 2-3 years. So far he completed four epic series: Memory, Sorrow and Thorn Otherland Shadowmarch The Last King of Osten Ard
