How come there is refrigerated Hummus and BabaG, but never Tahini Sauce?

Why is it that I can walk into any grocery store and find at least five different varieties of hummus, as well as some babaganoush, but never prepared Tahini SAUCE. I want to be specific, I'm not talking about a jar of shelf-stable tahini with no other ingredients. I'm talking about a blend of tahini plus lemon juice, olive oil, garlic, etc. The stuff you drizzle over falafel, not the stuff that makes up 90% of the recipe for what you drizzle over falafel and has the consistency of peanut butter.

Why can Hummus sit refrigerated, on the shelves of groceries, but Tahini Sauce cannot?

I don't know where you are, but of the various places I've lived in the US BabaG isn't common at all on store shelves. And of the 3, tahini sauce would be a VEEEEERY distant 3rd in terms of popularity, so that's the simple answer. Its not on shelves because there's no real demand. And additional speculation is that hummus and BabaG are significantly more work than a tahini sauce, further reducing demand.

  SF Bay Area, so I guess you could say we are a "food forward" kind of place. If you walk into Whole Foods or The Berkeley Bowl or Rainbow Cooperative in SF you will be amazed at how many brands of Hummus and even Baba ganoush you'll find.

  Decent baba is hard to find at regular grocery stores, which makes nonsense because it’s far superior to hummus. They’ll have 40 varieties of hummus, including weird stuff like chocolate, but no baba.

There is no reason a grocery store couldn't sell tahini sauce, but its a low acid high moisture food, aka it spoils fast. It needs to be treated the same as something like fresh salsa, the store would be getting it from local sources or making it themselves in the deli etc. Its not gonna ship from somewhere far away like a low moisture jar of sesame paste or high acidity hummus.

Tahini sauce spoils way faster than hummus or baba ghanoush because it's thinner and has more fresh ingredients, so the demand for shelf-stable versions just isn't there from the manufacturer side.

  Aha, thank you. I remember, many years ago, Trader Joe's had refrigerated Tahini Sauce and it did tend to go bad if I didn't use it all up after opening it.

It just makes no sense from a commercial perspective. Tahini concentrates are widely available, don’t require refrigeration, and have a long shelf life. All it takes to turn them into tahini is water (though it’s definitely going to be better with some lemon, parsley and garlic). Actual tahini would take more space during storage, transport and on the shelf, and the price can’t really be increased to compensate for that. And what would be the point to it? People don’t just buy tahini to sit on a park bench and eat it, they’ll take it home anyway. So why not do that with a concentrate? So concentrates are far more convenient for everyone involved, whether it’s the manufacturers, transport, storage, store owner and customer.

  I can't believe it's taken this long for someone to say that. I've been waiting for you to show up to the chat 🤣 I mean, maybe yes, with a food processor. I don't have a food processor. The times I've tried to make Tahini it was a mess and pretty labor intensive. It was easier for me to show up at Falafel Boy with an empty jar and they'd fill it up and charge me $4.50 I think. But I got tired of their product.

I can't tell you why (other than it just hasn't caught on with the average grocery buyer), but I can tell you that most neighbourhood shawarma shops are more than happy to sell you a tub of it. While you're there, get some pomegranate molasses. Your life will be complete.

I imagine it shouldn’t be too hard to come across if you’re in the Bay. I’m in SoCal and found multiple options on Instacart easily. Have you been to any Middle Eastern markets?

I get the bottled CAVA lemon herb tahini dressing at Whole Foods. It’s refrigerated but it lasts for a long time so I’m surprised by the comments saying that something like this can’t be sold? It’s good I recommend it.

I've only ever found chilled, ready to eat tahina in kosher shops. It doesn't seem to be all that popular outside Israel and I've never encountered it at any sort of kebab shop or takeaway except kosher ones.

  It's popular because kosher laws forbid mixing meat and dairy, so it's the default sauce for kebabs and shawarma, rather than yogurt-based sauces

Tahini sauce CAN sit unrefrigerated when properly industrialized like salad dressings, mayonaise and other condiments However, there is the economic factor - tahini sauce tastes better fresh and it's not laborious to make (when compared to things like hummus and babaghanoush) so the people who consume it have little incentive to buy it off the shelf

I'm a chef who has a meal delivery service and I can tell you that tahini sauce and dressing goes bad pretty quickly. Most of salad dressings are based on oil and vinegar and are fairly stable it's kept in the refrigerator. But tahini is an actual protein and carb and fat and it just goes bad faster so getting shelf life for refrigerator room for it in grocery stores would be difficult. Also if tahini dressing is insanely easy to make..

Kroger grocery stores (ones near me in the US, can't speak for other locations) carry tahini sauce and its in the vicinity of the others you listed (hummus and baba ganoush). Specifically at my grocer (King Soopers), its near the deli section in the aisles where hummus (typically the boars head section if your grocer has one), and other prepared deli items are (potato salad, pasta salad, prepared pizza and cold fried chicken etc). Generally its only one brand and item that I've seen in the entire store, so easily missed. I would check with your local grocer and see if maybe you have a similar setup and just didn't spot it.

Just a heads up that if you have a Persian market in your area, as I do, you can purchase fresh tahini from their deli. You'll never find it at a regular American supermarket because it's too perishable, and they won't sell enough to make it worthwhile.

  TJs sells Tahini. TJs does not sell tahini sauce. Years ago, they briefly did. If you see tahini SAUCE at TJs, take a picture and DM me.
