Great addition to your pellet! Differently help with learning fire management and controlling temps. Once you get used to it, the WSM is almost a set and forget. Enjoy and have fun.

Step one, season it very well. It’s critical to maintain steady temps and avoid smoke leaks. I used pork belly, ran it the hottest it will get and did it three times. I don’t have any gaskets or seals and I don’t have any leaks. See the seasoned grease gasket on my lid from the picture. The door is okay, but Cajun bandit sells a Stainless door that helps with temp uniformity and avoid smoke leaks. They also sell wheels for the base which for me it’s very helpful as I move it around and it increased the height, which was better for me. These unit is sensitive to the environment, just from the sun hitting it, it could reach to 150f temps. Harry Soo is a good resource for this smoker, great recipes to follow and tips. He has won many competitions using this exact unit. I just did overnight pork butts for like 10.5 hours and it held the temp very well without supervision. Never use water in the water pan, just cover it with foil for easy clean up after each cook. If you don’t clean it well you will have a rancid smoke and taste on your next cook. Honestly is pretty easy to use, seems like a challenge at the beginning but it’s not. One last tip is, you don’t need that much charcoal or wood but you will learn over the cooks and gauge yourself. I have never had to add more charcoal over a cook, I did it for the porkbutts out of caution but it was unnecessary. Makes great food, can't complain in that department. But its a pain to clean, especially the water bowl.
