Instead of adding oil to the pan, just put a layer of mayo on your steak. It melts into oil and gives you a solid crust without changing the flavor.
It's just egg and oil! It works like anything else would work. You cooked it right, give yourself the credit, not the mayo lol

I think it would work better on charcoal than gas. I imagine you need pretty high heat so it sets & starts to crust fast rather than dripping off.
